I'm on a mission to gather as many low-fat recipes as I can to help me on my WW journey. This is a little out of the ordinary version of Caesar Salad.

Ingredients

  • 2 medium heads romaine lettuce, washed and cut in half
  • 1 tablespoon olive oil
  • 2 teaspoons chili powder
  • 1 teaspoon garlic powder
  • 15 ounces black beans, drained
  • 1/2 cup corn
  • 1 medium red pepper, charred, diced
  • 2 tablespoons roasted pumpkin or sunflower seeds
  • 1/2 cup cojita or feta cheese
  • DRESSING
  • 1 medium avocado
  • 1/2 cup plain, fat-free greek yogurt
  • 1 medium lime, juiced
  • 1 medium clove garlic
  • 2 tablespoons cilantro, chopped
  • 4 ounces can green chilis
  • - salt and pepper to taste

How To Make grilled caesar salad

  • Step 1
    Pre heat cast iron grill, or gas grill In a small bowl, mix oil, chili powder, and garlic powder. Lightly brush both sides of romaine lettuce. Place lettuce cut side down on the grill for one to two minutes each side until grill marks are present. Remove from grill and set aside.
  • Step 2
    In a bowl, combine black beans, corn, red bell pepper, and remaining chili oil used previously on lettuce. Season with salt and pepper.
  • Step 3
    Blend dressing ingredients together until smooth and creamy. To assemble salad, place grilled romaine lettuce on a plate, spoon over vegetables, drizzle with dressing, and top with seeds and crumbled cheese.
