- 4 to 6 large mushrooms,sliced
- 1 - avocado,siced
- 3 - fresh peaches, sliced
- 1/4 - iceberg lettuce head,torn into bite-size pieces
- 1/4 - romaine lettuce head, torn into bite-size pieces

- 1/4 cup shredded sharp cheddar cheese
- MEXICAN DRESSING
- 1/2 cup mild or hot taco sauce
- 1/4 cup red wine vinegar
- 1/4 cup olive oil, extra virgin
- 1 tablespoon parsley, minced
- 1 tablespoon green chiles, mild, diced
- 1 teaspoon cilantro, fresh, minced
- 1 teaspoon oregano, fresh, minced or 1/4 teaspoon dried oregano
