I developed this salad for a St. Patrick's Day party. We all brought green foods. Someone actually brought green potato soup, but I think some of the other dishes were better received! We all laughed. This one is good and definitely healthy.

This green green salad is delicious! Filled with all kinds of green veggies, it has a satisfying crunch and a refreshing flavor. Raw broccoli bulks up the salad and gives structure. We loved the slightly smoky flavor of the bacon. The light ranch dressing helps pull all the flavors together. It's a healthier salad everyone will enjoy and a tasty way to eat your veggies.

Ingredients For green green salad

  • 2 c
    fresh broccoli florets
  • 1 lg
    seedless cucumber, cut into chunks
  • 1 sm
    zucchini, cut in chunks
  • 3
    whole green onions, thinly sliced
  • 2 c
    shredded fresh spinach
  • 1/4 c
    cooked, crumbled bacon
  • 1 c
    light ranch dressing
  • 1
    green pepper, sliced into rings
  • several large lettuce leaves
  • parsely sprigs

How To Make green green salad

  • Lettuce leaves placed in a bowl.

    Line a large clear glass salad bowl with the lettuce leaves.
  • Broccoli, cucumber, zucchini, green onions, spinach, and bacon in a bowl.

    In a separate bowl, zdd the broccoli, cucumber, zucchini, green onion, spinach, and bacon. Mix well.
  • Folding in dressing.

    Fold in the dressing and coat everything well.
  • Mixture added to the bowl with lettuce before chilling.

    Mound the mixture into the lettuce-lined salad bowl. Top with the green pepper rings and parsley sprigs. Refrigerate before serving.
