I had never eaten kale before, much less raw in a salad. I am hooked. You feel like you are eating healthy!

Ingredients

  • 3 fresh bunches green or black tuscan kale
  • 1 tablespoon minced garlic
  • 1/2 cup julienned reconstitued sundried tomatoes
  • 1/2 cup crumbled feta cheese
  • 1/2 cup julienned dried apricots
  • 1 - fresh lemon juiced
  • 3 tablespoons olive oil
  • 1 teaspoon kosher salt
  • 1 tablespoon crushed red pepper flakes

How To Make fresh kale salad

  • Step 1
    Wash kale very well and dry. In a large mixing bowl add the kale, salt and lemon juice. Toss well. If you do not add the lemon juice the kale willl darken
  • Step 2
    Add all other ingredients and mix well. Can be served immediately or refrigerate until time of service. Can be held for three days.
