DAN'S BEST WILTED SPINACH SALAD

We both love it, but it is best when freshly made and served immediately. Try it I am sure you will like it too.
- 6 c
- baby spinach leaves
- 1/4 c
- sliced green onions
- 3-4 slice
- 3 Tbsp
- 1 tsp
- 1 c
- chopped apple
- 1/3 c
- crumbled feta cheese
- 1 small
- red bell pepper, chopped
How to Make DAN'S BEST WILTED SPINACH SALAD
- 1Mix spinach, green onion and chopped red bell pepper in a bowl and set aside. Cook bacon in a large skillet over medium heat until crisp.
- 2Remove bacon & place on paper towel, but save 2 tablespoons bacon drippings in skillet. Crumble bacon; set aside. Stir vinegar and sugar into reserved drippings; heat to a boil scraping bits as you go from bottom of skillet. Add spinach mixture to skillet. Toss 1/2 to 1 minute until spinach begins to wilt. REMOVE FROM HEAT.
- 3Add apple and feta; toss gently to mix. Transfer to a large bowl or platter and sprinkle with crumbled bacon. SERVE IMMEDIATELY.
- 4NOTE: Best if made using Baby leaf spinach, but you can use frozen if it is completely thawed, and excess water removed before adding it to the skillet.
