This is a combination of several recipes I have found and tried over the years. It is very filling and hearty. Since the base is cabbage it will last in the refrigerator for several days making it great for those who like to "food prep" for the week. If you really want it to last, omit the mixed greens. If you omit the chicken, it is a perfect vegetarian or vegan salad too! My teenage daughter has several food allergies and this contains no Peanuts, Dairy, Corn, Egg, or Gluten. She loves it and eats it for several days.

If you're looking for a healthy, refreshing, and tasty salad add this chopped green goddess salad to your menu. The dairy-free green goddess dressing is a little tangy and nutty. It's filled with shallots, garlic, and tons of fresh herbs. Basil, cilantro, mint, and spinach give the dressing its traditional green color. Grilled chicken breasts, plus a few hidden dressing ingredients, add a nice amount of protein. The base for the salad is a delicious mix of cabbage, mixed greens, and fresh spinach. A fantastic dinner salad in the summer when you want something refreshing. This salad is perfect for meal prep too. Toss the dressing with everything but the mixed greens. Then mix those in just before serving.

  • DRESSING
  • 1 c
    fresh basil
  • 1/2 c
    fresh cilantro
  • 3
    fresh mint leaves
  • 1/4 c
    nutritional yeast
  • 1/3 c
    hemp seeds
  • 2
    lemons, juiced
  • 1/4 c
    avocado oil
  • 1
    shallot, chopped
  • 2 Tbsp
    rice wine vinegar
  • 2 clove
    fresh garlic
  • 1/2 c
    walnuts or cashews
  • 1 c
    fresh spinach
  • SALAD
  • 1
    head of cabbage chopped or a bag of chopped cabbage
  • 4
    baby cucumbers, chopped
  • 1 Tbsp
    chives
  • 1/2 bunch
    green onion, chopped (optional)

    jalapenos, seeded & chopped
  • 2 c
    mixed greens, chopped
  • 1 c
    fresh spinach
  • 6-8
    chicken breast tenders, seasoned & grilled
  • salt & pepper, to taste

How To Make chopped "green goddess" salad w/ homemade dressing

  • Dressing ingredients in a blender.

    Place all of the dressing ingredients in a blender or food processor.
  • Dressing ingredients blended.

    Blend until smooth.
  • Salad ingredients in a mixing bowl.

    Place all of the salad ingredients in a large bowl and mix.
  • Grilled chicken cut into cubes.

    Chop cooked chicken tenders and add to salad.
  • Green goddess dressing tossed with salad greens.
