Ingredients

  • 2 tablespoons pecans, chopped
  • 2 tablespoons sugar
  • 3 cups baby greens or lettuce of your choice
  • 3 bartlett pears, cored and chopped
  • 1 1/2 ounces roquefort cheese
  • 1/2 fresh avocado, diced
  • 1/2 cup green onions, thinly sliced
  • 3 tablespoons red wine vinegar
  • 1 1/2 teaspoons sugar
  • 1 1/2 teaspoons dijon mustard
  • 1 clove garlic, minced or pressed
  • 1/2 teaspoon salt
  • pinch black pepper

How To Make baby greens with pears & roquefort

  • Step 1
    Blend dressing ingredients beginning with red wine vinegar through black pepper in a blender and set aside.
  • Step 2
    In a skillet, over medium heat, cook pecans with 2 tbsp. sugar. Gently stir until sugar is melted and the pecans become caramelized. Carefully transfer hot nuts to a sheet of waxed paper and allow to cool.
  • Step 3
    In a large serving bowl, combine lettuce, pears, cheese crumbles, avocado and green onion.
  • Step 4
    Refrigerate until read to serve - then add dressing and toss well. Scatter pecan pieces over the top.
