Ingredients
- 2 tablespoons pecans, chopped
- 2 tablespoons sugar
- 3 cups baby greens or lettuce of your choice
- 3 bartlett pears, cored and chopped
- 1 1/2 ounces roquefort cheese
- 1/2 fresh avocado, diced
- 1/2 cup green onions, thinly sliced
- 3 tablespoons red wine vinegar
- 1 1/2 teaspoons sugar
- 1 1/2 teaspoons dijon mustard
- 1 clove garlic, minced or pressed
- 1/2 teaspoon salt
- pinch black pepper
How To Make baby greens with pears & roquefort

Step 1Blend dressing ingredients beginning with red wine vinegar through black pepper in a blender and set aside.

Step 2In a skillet, over medium heat, cook pecans with 2 tbsp. sugar. Gently stir until sugar is melted and the pecans become caramelized. Carefully transfer hot nuts to a sheet of waxed paper and allow to cool.

Step 3In a large serving bowl, combine lettuce, pears, cheese crumbles, avocado and green onion.

Step 4Refrigerate until read to serve - then add dressing and toss well. Scatter pecan pieces over the top.
