This is a really nice summer salad that you can eat as a salad -serve on greens, eat on bread, even pita bread according to the Mr. Food website. Yum!

Ingredients

    hard-boiled eggs, peeled and chopped
  • 1/4 c
    shredded monterey jack cheese
  • 1/4 c
    finely chopped red onion
  • 1
    ripe avocado, peeled, seeded, and cut into 1-inch chunks
  • 2 Tbsp
    mayonnaise
  • 2 tsp
    lime juice
  • 1/4 tsp
    salt
  • 1/8 tsp
    black pepper
  • 4
    romaine lettuce leaves

How to Make Avocado Egg Salad

    1. In a large bowl, combine all ingredients except lettuce; mix well.
  2. 2. Spoon mixture onto lettuce leaves, distributing evenly, or cover and chill until ready to serve.

    You can serve this with your favorite bread or on a bed of lettuce.
