Ingredients

  • 5 cups baby arugula
  • 1 can (16 ounce) chickpeas, rinsed and drained
  • 3 ounces crumbled feta cheese
  • 1/2 - red onion, thinly sliced
  • 1 1/2 cups seedless red grapes, cut in half
  • 1 tablespoon snipped fresh chives
  • 1 tablespoon chopped fresh parsley
  • 2 tablespoons orange blossom honey
  • 1 tablespoon orange blossom water
  • 3 tablespoons grape seed oil or light olive oil
  • 1 tablespoon white wine vinegar
  • - salt and pepper

How To Make arugula, grape and chickpea salad

  • Step 1
    Combine arugula, chickpeas, feta, onion, and grapes in a salad bowl.
  • Step 2
    Whisk together the chive, parsley, honey, orange blossom water, salad oil, vinegar , salt and pepper.
  • Step 3
    Serve orange blossom vinaigrette with the salad.
