- 1/4 cup fresh squeezed lime juice
- 4 cups watermelon, cubed in 1" pieces or use a melon baller.
- 1/2 cup peeled and diced jicama
- 1/2 jalapeno chili stem & seeds removed then dice
- 1/4 cup fresh cilantro, chopped
- 1/4 cup crumbled cotija cheese

Step 1Soak the chopped red onion in the lime juice while you are prepping the other ingredients, about 10 minutes.

Step 2Gently combine all ingredients into a large serving bowl.
