Ingredients

  • 1/4 cup fresh squeezed lime juice
  • 4 cups watermelon, cubed in 1" pieces or use a melon baller.
  • 1/2 cup peeled and diced jicama
  • 1/2 jalapeno chili stem & seeds removed then dice
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup crumbled cotija cheese

How To Make watermelon salad with jicama & cotija

  • Step 1
    Soak the chopped red onion in the lime juice while you are prepping the other ingredients, about 10 minutes.
  • Step 2
    Gently combine all ingredients into a large serving bowl.
  • Step 3
    Serve immediately. Salad will get soggy if kept overnight.
