watermelon and feta salad

Anyone that knows me well, knows I love watermelon. I am also crazy about feta cheese. Add a little mint from the garden and you make a fun and refreshing salad.

Ingredients

  • 1 - seedless watermelon
  • 6 ounces feta cheese
  • 1/4 cup mint chiffonade
  • 1/4 cup olive oil, extra virgin
  • 1/4 cup rice wine vinegar
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper

How To Make watermelon and feta salad

  • Step 1
    DRESSING: Mix oil, vinegar salt and pepper and set aside.
  • Step 2
    Cube, ball or chunk watermelon into bite size bits.
  • Step 3
    Chiffonade (roll and cut into thin slices) the mint.
  • Step 4
    Mix together, mint, watermelon and dressing and chill.
  • Step 5
    When ready to serve sprinkle on the feta cheese. Garnish with additional sprigs of mint.
