Anyone that knows me well, knows I love watermelon. I am also crazy about feta cheese. Add a little mint from the garden and you make a fun and refreshing salad.

Ingredients

  • 1
    seedless watermelon
  • 6 oz
    feta cheese
  • 1/4 c
    mint chiffonade
  • 1/4 c
    olive oil, extra virgin
  • 1/4 c
    rice wine vinegar
  • 1/2 tsp
    kosher salt
  • 1/4 tsp
    freshly ground black pepper

How to Make Watermelon and Feta Salad

Step-by-Step

  1. DRESSING:
    Mix oil, vinegar salt and pepper and set aside.
  2. Cube, ball or chunk watermelon into bite size bits.
  3. Chiffonade (roll and cut into thin slices) the mint.
  4. Mix together, mint, watermelon and dressing and chill.
  5. When ready to serve sprinkle on the feta cheese. Garnish with additional sprigs of mint.
