watermelon and feta salad
Anyone that knows me well, knows I love watermelon. I am also crazy about feta cheese. Add a little mint from the garden and you make a fun and refreshing salad.

Ingredients
- 1 - seedless watermelon
- 6 ounces feta cheese
- 1/4 cup mint chiffonade
- 1/4 cup olive oil, extra virgin
- 1/4 cup rice wine vinegar
- 1/2 teaspoon kosher salt
- 1/4 teaspoon freshly ground black pepper
How To Make watermelon and feta salad

Step 1DRESSING: Mix oil, vinegar salt and pepper and set aside.

Step 2Cube, ball or chunk watermelon into bite size bits.

Step 3Chiffonade (roll and cut into thin slices) the mint.

Step 4Mix together, mint, watermelon and dressing and chill.

Step 5When ready to serve sprinkle on the feta cheese. Garnish with additional sprigs of mint.
