tortellini fruit salad

SPRING'S coming just around the corner.Time to think good healthy salads. Here's one that a Co worker brought in to our pot luck lunch. Enjoy! We did.

Ingredients

  • 24 ounces cooked tortellini ( your choice )
  • 3/4 cup orange juice
  • 3/4 cup maple syrup
  • 2 tablespoons ground cinnamon
  • pinch of salt
  • 1 pint strawberries sliced
  • 1/2 - of a cantaloupe ( cubed )
  • 1 cup fresh green seedless grapes some cut in half some whole
  • 1 cup fresh red seedless grapes some cut in half and some whole
  • 1 pint blueberries, fresh
  • 1/2 cup raisins or craisans ( your choice )
  • 1/2 cup candied walnuts ( optional )

How To Make tortellini fruit salad

  • Step 1
    Cook pasta as directed. Rinse with cold water ~ drain well.
  • Step 2
    Toss with 2 teaspoons oil.
  • Step 3
    Set aside.
  • Step 4
    Add fruit and ( CANDIED WALNUTS ** if you choose to use to your salad )...
  • Step 5
    mix orange juice,maple syrup,cinnamon,salt in a shaker. ~~Shake Well~~
  • Step 6
    Refrigerate all till ready to serve.
  • Step 7
    Add dressing.
  • Step 8
    CANDIED WALNUTS In non stick skillet on medium heat. Add 1/2 cup Walnuts and 1 tablespoon sugar. Stir constantly. Remove when Walnuts are covered in sugar and sugar is well melted.
