Ingredients
- 10 medium shrimp, peeled and deveined
- 4 ounces honey ham, cubed
- 1 cup medium grain rice, cooked and cooled (rice should measure 2 cups after cooking)
- 1 - pineapple, cut in half vertically and pineapple flex cubed and moved to the sides
- 1 can coconut milk
- 1 teaspoon paprika
- 1 teaspoon lemon pepper seasoning
- 1 teaspoon salt
- 1 tablespoon oil
- 1/2 cup strawberries
How To Make stuffed pineapple hawaiian-style

Step 1Mix peeled, deveined shrimp with oil and seasonings (paprika, lemon pepper, salt) and saute in a skillet until done. Remove from pan and cool.

Step 2Slice pineapple in half vertically and remove pineapple meat and slice into chunks. Place pineapple chunks to the side.

Step 3Cook the rice according to pkg. instructions substituting coconut milk for 1 cup of water. Cool rice.

Step 4Place 1/4 of the ham in bottom of each pineapple half . Lightly cover the ham with cooked rice (1 cup in each pineapple half). Place the pineapple and strawberries over rice in each pineapple half. Place cooked shrimp on top of fruit (in each half) and cover with remaining ham. Place in 350 degree oven for 10 minutes just to warm through.
