strawberry balsamic salad
This is my version of a recipe I found from Rachel Ray. It's sweet and delicious!

Ingredients
- 2 tablespoons strawberry jam
- 2 tablespoons balsamic vinegar
- 4 tablespoons extra virgin olive oil
- - salt and pepper to taste
- 5-7 - strawberries, sliced into thin slices (and with the stems cut off)
- 1/4 cup red onion, finely diced
- 4-5 cups romaine or red lettuce, chopped
- 1/2 cup candied or toasted walnuts, chopped
- - crumbled goat cheese or feta to taste, optional
How To Make strawberry balsamic salad

Step 1In a medium bowl add the strawberry jam and balsamic vinegar. Whisk in the olive oil and season with salt and pepper to taste. Set aside or refrigerate until ready to use. (Bring to room temp. before using)

Step 2In a large salad bowl toss the strawberries, red onion, and lettuce together. Pour dressing over lettuce and toss to coat evenly. Add nuts and cheese and toss. Serve.
