This is great side salad for the summer when the fruits are ripe and sweet. You can add sliced chicken breast to have it as an entrée (Serves 4 as an entrée). Serve it with a sweet white wine such as Riesling.

Ingredients For stone fruit salad

  • 2 Tbsp
    raspberry vineger
  • 4 Tbsp
    almond or olive oil
  • 1/4 tsp
    salt
  • 1/8 tsp
    black pepper
  • 8 c
    sweet butter salad greens
  • 3
    plums, sliced
  • 2
    peaches, sliced
  • 2
    nectarines, sliced
  • 2
    apricots, sliced
  • 3/4 c
    fresh cherries, pitted
  • 1/4 c
    crumbled feta cheese
  • 2 Tbsp
    sliced almonds, toasted

How To Make stone fruit salad

  • 1
    Sir together vinegar, oil salt and pepper
  • 2
    Toss greens and fruit with dressing. Sprinkle with cheese and almonds.

    Serve immediately.
