This is great side salad for the summer when the fruits are ripe and sweet. You can add sliced chicken breast to have it as an entrée (Serves 4 as an entrée). Serve it with a sweet white wine such as Riesling.

Ingredients

  • 2 tablespoons raspberry vineger
  • 4 tablespoons almond or olive oil
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 8 cups sweet butter salad greens
  • 3 - plums, sliced
  • 2 - peaches, sliced
  • 2 - nectarines, sliced
  • 2 - apricots, sliced
  • 3/4 cup fresh cherries, pitted
  • 1/4 cup crumbled feta cheese
  • 2 tablespoons sliced almonds, toasted

How To Make stone fruit salad

  • Step 1
    Sir together vinegar, oil salt and pepper
  • Step 2
    Toss greens and fruit with dressing. Sprinkle with cheese and almonds.
  • Step 3
    Serve immediately.
