Ingredients

  • 2 pounds butternut squash, seeded and cubed.
  • 2 tablespoons olive oil
  • 8 cups organic salad greens
  • 1/4 cup pine nuts
  • 1/4 cup pomegranate seeds
  • 1/4 cup sliced red onion
  • 1/2 cup wish bone light raspberry-walnut vinaigrette
  • 1 tablespoon dijon mustard

How To Make squash-pomegrante salad

  • Step 1
    Heat oven to 400. On lg baking sheet, toss squash cubes and oil. Season w/ salt and pepper to taste. Roast 20 min, or until tender, stirring once. Let cool. transfer to lg bowl.
  • Step 2
    Add next 4 ingredients to bowl, toss to combine.
  • Step 3
    In another bowl, blend vinaigrette and mustard drizzle over salad.
