butternut squash, seeded and cubed.
2 Tbsp
olive oil
8 c
organic salad greens
1/4 c
pine nuts
1/4 c
pomegranate seeds
1/4 c
sliced red onion
1/2 c
wish bone light raspberry-walnut vinaigrette
1 Tbsp
dijon mustard

How to Make squash-pomegrante salad


  • 1Heat oven to 400. On lg baking sheet, toss squash cubes and oil. Season w/ salt and pepper to taste. Roast 20 min, or until tender, stirring once. Let cool. transfer to lg bowl.
  • 2Add next 4 ingredients to bowl, toss to combine.
  • 3In another bowl, blend vinaigrette and mustard drizzle over salad.
