Ingredients
- 2 pounds butternut squash, seeded and cubed.
- 2 tablespoons olive oil
- 8 cups organic salad greens
- 1/4 cup pine nuts
- 1/4 cup pomegranate seeds
- 1/4 cup sliced red onion
- 1/2 cup wish bone light raspberry-walnut vinaigrette
- 1 tablespoon dijon mustard
How To Make squash-pomegrante salad

Step 1Heat oven to 400. On lg baking sheet, toss squash cubes and oil. Season w/ salt and pepper to taste. Roast 20 min, or until tender, stirring once. Let cool. transfer to lg bowl.

Step 2Add next 4 ingredients to bowl, toss to combine.

Step 3In another bowl, blend vinaigrette and mustard drizzle over salad.
