spinach & strawberry salad

I was introduced to this amazing salad at a baby shower. It is simple to make and delicious!

Ingredients

  • 10 ounces container of baby spinach
  • 1 to 1-1/2 cups sliced strawberries (quantity is a personal preference)
  • 3/4 to 1 cups slivered almonds (quantity is a personal preference)
  • DRESSING
  • 1/2 cup white vinegar - i choose to use red wine vinegar
  • 2/3 cup olive oil
  • 1/2 cup sugar
  • 2 tablespoons poppy seeds
  • 2 tablespoons minced onion (dry)
  • 2 tablespoons roasted sesame seeds
  • 1/2 teaspoon paprika
  • 1/2 teaspoon cumin (my own addition)

How To Make spinach & strawberry salad

  • Step 1
    In a large bowl mix together spinach, strawberries & almonds
  • Step 2
    In a blender add: vinegar, oil, sugar, poppy seeds, onion, sesame seeds, paprika & cumin. Continue to blend until all sugar has dissolved.
  • Step 3
    Put dressing in an air tight container and pour on salad about 5-10 minutes before serving. The lady I got the recipe from does not recommend refrigerating the dressing as it makes the oil kind of harden. So if you prepare the day before leave dressing out on your counter.
