i came up with this recipe the other night for dinner hubby jus loved it as well as i did...hope u try it to and lov it like me do !!!

  • 1 pkg
    [5 oz] fresh spinach leaves
  • 4 slice
    thick cut bacon
  • 1 medium
    onion,sliced into rings ,then seperated
  • 1 qt
    fresh sliced strawberries with 1t splenda added to them,well chilled
  • 4 medium
    fresh peaches,pitted and cubed with 1t splenda added,well chilled
  • 2/3 c
    pecans, in pieces
  • 1/2 c
    craisins[dried cranberries]
  • 1 c
    low far feat cheese, crumbled
  • 2 Tbsp
    apple cider vinegar

How to Make spinach and fruit salad


  1. have strawberries and peaches ready and cold in the fridge
  2. cut bacon into small pieces and put in med fry pan cook til extra crisp...remove bacon pieces from grease add onion ring pieces cook til limp and tender... remove to paper towel lined plate to grease add vinegar and all juice u drain from strawberries and peaches..... cook and stir til it becomes like a syrup turn off
  3. in lg bowl add spinach leaves that u have rough broke [use yur hands,not a knife],strawberries and peaches,add bacon pieces and onion to this too
  4. once syrup has cooled some pour into bowl with fruit and spinach toss well to coat all
  5. jus before serving add crasions and pecans toss lightly
