Nice fruit salad for the holidays. If you are sensitive to heat, leave out the crushed red pepper.

orange sections (about 4 oranges)
1/2 c
pomegranate arils
kiwifruit, peeled and sliced
pineapple, peeled and cut into 1-inch cubes (about a 4 pound pineapple)
1 tsp
lime zest
1 Tbsp
fresh lime juice
1 Tbsp
fresh orange juice
1/8 tsp
ground red pepper
1/2 c
flaked, sweetened coconut, toasted and divided

How to Make Pineapple and Orange Salad with Toasted Coconut


  • 1Combine the first 4 ingredients in a medium bowl. Combine thezest and next 3 ingredients (through the pepper) in a small bowl.
  • 2Gently stir the lime mixture into the fruit mixture; cover and chill.
  • 3Just before serving, stir 1/4 cup coconut into the pineapple mixture. Sprinkle 1/4 cup coconut over the top.
