Ingredients
- 2 cups orange sections (about 4 oranges)
- 1/2 cup pomegranate arils
- 4 - kiwifruit, peeled and sliced
- 1 - pineapple, peeled and cut into 1-inch cubes (about a 4 pound pineapple)
- 1 teaspoon lime zest
- 1 tablespoon fresh lime juice
- 1 tablespoon fresh orange juice
- 1/8 teaspoon ground red pepper
- 1/2 cup flaked, sweetened coconut, toasted and divided
How To Make pineapple and orange salad with toasted coconut

Step 1Combine the first 4 ingredients in a medium bowl. Combine thezest and next 3 ingredients (through the pepper) in a small bowl.

Step 2Gently stir the lime mixture into the fruit mixture; cover and chill.

Step 3Just before serving, stir 1/4 cup coconut into the pineapple mixture. Sprinkle 1/4 cup coconut over the top.
