Ingredients
- 1 - tomato
- 2 - green onions
- 1 - fresh peach or canned in own juice
- 1 cup cottage cheese, large curd
- 1 pinch sea salt
- 1 dash ground pepper
- 1 pinch dill weed, fresh, chopped
- bunch cilantro, fresh, chopped
- dash olive oil, extra virgin
- dash fresh lemon juice
How To Make peach salsa salad

Step 1Chop fresh tomato, peach and 2 green onions into small pieces

Step 2Add salt, pepper, chopped dill weed and cilantro to above mixture.

Step 3Splash in a dash of lemon juice and olive oil. Mix all together and let sit for 10 minutes.

Step 4Put 1/2 cup cottage cheese into individual side dish, place half of salsa on top and serve! Makes two servings. Additional servings can be made adding addional ingredients. Can also be served to a group by placing cottage cheese in a serving bowl and putting salsa on top. I also put 1 tsp of sugar in the salsa since my husband like it a bit sweeter.
