This yummy salad goes great w/ a simple garlic-lemon chicken.

Ingredients

  • 1/2 cup whole, shelled pecans
  • 6 tablespoons light greek-style vinaigrette salad dressing
  • 1 - 6 oz pkg mixed salad greens, preferably organic
  • 1 - head endive, cut crosswise into 1
  • 1 - 11 oz can mandarin oranges, drained
  • 1/2 cup crumbled feta cheese
  • 1/4 cup thinly sliced red onion
  • 2 tablespoons chopped fresh dill

How To Make orange-pecan salad.

  • Step 1
    Heat a dry skillet over medium heat. Add pecans and cook, stirring for 3-4 mins. Remove from skillet and cool.
  • Step 2
    In lg bowl, combine salad dressing and dill. Add salad greens, endive, oranges, feta cheese, onion slices and pecans. Gently toss to coat.
