Ingredients

  • 2 c
    baby arugula
  • 2 c
    mixed baby greens
  • 2 1/2
    clementines, segments sliced in half
  • 1 c
    deep purple grapes, sliced in half
  • 5
    strawberries, sliced
  • 1/3 c
    crumbled gorgonzola cheese
  • ·
    sprinkling of osem mini mandel croutons
  • DRESSING:

  • 1/3 n 1/4 c
    olive oil, divided
  • 2 tsp
    lemon juice
  • 1/2
    juice of 1/2 a clementine
  • 2 clove
    garlic, smashed and sliced
  • ·
    just a pinch of salt
  • 1/4 tsp
    allspice
  • 1 tsp
    sugar

How to Make Oh My Darlin' Clementine Salad

Step-by-Step

  1. Whisk together all dressing ingredients, reserving 1/4 cup olive oil to the side. Cover dressing and set aside for about 10 minutes for flavors to meld.
  2. Mix together all salad ingredients, reserving 1 strawberry and 1/2 clementine to the side.
  3. Take dressing and whisk it again. Add the rest of the olive oil. Through a strainer (to strain out the raw garlic bits), pour it over the salad.
  4. Toss salad. Garnish top with remaining strawberries, grapes and clementine segments.
  5. When serving, sprinkle mandel croutons on top.
