I love mangoes, they are my favorite fruit. Nothing beats a mango for a refreshing salad. They are refreshing, tart, tangy and sweet. I hope you will enjoy this simple treat, that is good served cold or at room temperature.

Ingredients

  • 4 large mango, chilled, peeled, cut into thin slices
  • 1 1/2 tablespoons cilantro, finely chopped
  • 1 1/2 tablespoons mint, finely chopped
  • 1/2 medium orange, zested
  • 1/4 - 1/2 teaspoon sea salt
  • 1 small lime, juiced
  • 3 - 4 tablespoons honey
  • 1/4 finely chopped almonds, garnish

How To Make mango salad

  • Step 1
    In a small bowl add the salt, lime juice and honey, mix well. Taste re-season if necessary and set aside until needed.
  • Step 2
    In a larger bowl add the mango slices, cilantro, mint and orange zest, toss gently.
  • Step 3
    Next add the prepared lime dressing and toss well to coat the mangoes.
  • Step 4
    Put on serving platter and garnish with nuts.
