This is a salad which can be used as a main dish as it contains chicken, spinach, vegetables and fruit. It is soooo tasty and a cool dish for a hot summer's night.

Ingredients

  • 8 ounces bow tie pasta
  • 1/2 large cucumber
  • 1/2 cup diced red bell pepper
  • 1/2 cup coarsely chopped red onion
  • 1 package 6oz. fresh baby spinach leaves
  • 1 can 11 oz. mandarin orange segments, drained
  • 2 cups diced cooked chicken
  • 1/2 cup sliced almonds, toasted
  • 1 teaspoon finely chopped, peeled fresh ginger root
  • 1 clove pressed garlic
  • 1/3 cup rice vinegar or white wine vinegar
  • 1/4 cup orange juice, fresh
  • 1/4 cup vegetable oil
  • 1 teaspoon sesame oil
  • 1 package lipton onion soup mix (envelope)
  • 2 teaspoons white sugar

How To Make mandarin pasta salad

  • Step 1
    Start with the dressing. Finely chop gingeroot . In small bowl, whisk gingerroot, garlic, vinegar, orange juice, vegetable oil, sesame oil, soup mix & sugar. Cover, refrigerate until ready to use.
  • Step 2
    For salad, cook pasta according to package, drain and rinse under cold running water. Place pasta in large bowl. Meanwhile score cucumber with a fork, remove seeds using a corer, slice cuke and cut slices in half. Dice bell pepper, coarsely chop onion. Add cuke, bell pepper, onion, spinach, mandarin oranges, chicken and almonds to pasta. Pour dressing over salad and toss. Serve immediately.
