1Start with the dressing. Finely chop gingeroot . In small bowl, whisk gingerroot, garlic, vinegar, orange juice, vegetable oil, sesame oil, soup mix & sugar. Cover, refrigerate until ready to use.
2For salad, cook pasta according to package, drain and rinse under cold running water. Place pasta in large bowl. Meanwhile score cucumber with a fork, remove seeds using a corer, slice cuke and cut slices in half. Dice bell pepper, coarsely chop onion. Add cuke, bell pepper, onion, spinach, mandarin oranges, chicken and almonds to pasta. Pour dressing over salad and toss. Serve immediately.
