Mandarin Orange Jello Salad
1 pkglemon gelatin
1 pkgorange gelatin
2 chot water
1 can(s)crushed pineapple, drained (reserve juice for topping)
1 cminiature marshmallows
1 or 2 can(s)mandarin oranges, drained
How to Make Mandarin Orange Jello Salad
- Dissolve gelatin in hot water. Add 1 1/2 cups cold water. When gelatin has thickened, but not set, add bananas and crushed pineapple.
- Fold in marshmallows and oranges. Pour into 9" X 13" pan and return to refrigerator.
- After gelatin is set:
Cook 2 tbsp flour, 1 egg slightly beaten, 1/2 cup sugar, and 1 cup pineapple juice. Cook until thickened. Add 2 tbsp butter.
- After this mixture is cold, add 1 cup whipping cream (whipped with juice of one lemon).
- Spread over top of gelatin, and keep chilled.
