This recipe looks very pretty served in the halved pineapple shells. Delicious as well!

Ingredients

  • 1 medium fresh pineapple
  • 1 cup fresh strawberries, hulled and halved
  • 1 - orange, peeled, sliced and seeded
  • 1/2 cup seedless red grapes
  • 1 - kiwifruit, peeled and sliced
  • 1/2 teaspoon grated lime rind
  • 1/2 cup fresh lime juice
  • 3 tablespoons honey
  • 1 tablespoon light rum
  • 1 tablespoon grand marnier or other orange flavored liqueur
  • 1 - banana, sliced

How To Make mai tai fruit salad

  • Step 1
    Cut the pineapple in half lengthwise, leaving leaves intact. Remove the pulp in chunks, leaving 1/2 inch thick shells. Set the shells aside.
  • Step 2
    Combine the pineapple chunks, strawberries, orange, grapes, and kiwifruit in a bowl. Combine the lime rind and the next 4 ingredients; stir well, and pour over the fruit mixture.
  • Step 3
    Add the bananas, and toss gently. Spoon the fruit mixture into the reserved shells to serve.
