I made this for the "Circle of Seekers Coven" on Litha 2009. It went over very well. Since then I have made it many times on a hot summers day.

Ingredients

  • 3-4 c
    salad greens
  • 3 c
    apples chopped with skins attached
  • 3 c
    green grapes
  • 2 c
    fresh sliced strawberries
  • DRESSING

  • 1 tsp
    dry mustard
  • 1/2 tsp
    dried basil or 2 teaspoon fresh
  • 1/4 c
    cider vinegar
  • 1/2 c
    pure maple syrup
  • 1 Tbsp
    lemon juice
  • 1 clove
    garlic, minced
  • 1 c
    olive oil
  • 1 tsp
    salt
  • 1/2 tsp
    fresh ground pepper

How to Make Litha Fruit Salad with Maple dressing.

Step-by-Step

  1. Dressing
    Combine mustard and basil in a small bowl. With a whisk, add vinegar, maple syrup, lemon juice and garlic. Add olive oil and continue whisking until ingredients are well combined. Season with salt and pepper. Refrigerated, the dressing will keep for several weeks.
  2. Salad
    combine the rest of the ingredients and Toss with dressing and serve
