This is another wonderful Litha salad. It celebrates the freshness of the new life springing forth durning the summer months.

Ingredients

  • DRESSING

  • 3 Tbsp
    concentrated apple juice (you can get this frozen)
  • 1 Tbsp
    light corn syrup
  • 1 tsp
    apple cider vinegar
  • 2 Tbsp
    brown sugar packed
  • 1/8 tsp
    garlic
  • 1 dash(es)
    pepper
  • SALAD

  • 1 pkg
    8 oz tortellini pasta noodles
  • 2 c
    chopped apples
  • 2 c
    shredded salad greens
  • 1 c
    fresh strawberries sliced
  • 1/2 c
    thin sliced celery
  • 1/4 c
    chopped green onions
  • 2 Tbsp
    pine nuts

How to Make Litha APPLE TORTELLINI SALAD

Step-by-Step

  1. Combine apple juice concentrate, corn syrup, vinegar,
    sugar, garlic salt and pepper. Cover and refrigerate.
  2. Cook the cheese tortellini according to package directions. Drain and cool thoroughly.
  3. In large mixing bowl combine tortellini and remaining ingredients. Toss gently with apple juice dressing and serve immediately.
