This is a cool and refreshing salad for the summer. I love the lemon flavor with all the fruits. Delicious.

Ingredients

  • 1/2 c
    acini di pepe (tiny bead shaped pasta)
  • 4 oz
    instant lemon pudding mix
  • 29 oz
    can peaches in light syrup
  • 22 oz
    mandarin orange sections, drained
  • 1 pt
    strawberries, fresh, sliced
  • 1/2 c
    sliced almonds
  • 8 oz
    whipped topping, thawed

How to Make Lemon Sunshine Salad

Step-by-Step

  1. Cook pasta according to package directions. Drain and add to mixing bowl.
  2. Stir in pudding mix.
  3. Drain peaches, reserving half cup of syrup, stir into pasta mixture.
  4. Cut peach slices into bite size pieces.
  5. Fold peaches, mandarin oranges, and strawberries into mixture.
  6. After two hours fold in whipped topping and sliced almonds.
