This is a cool and refreshing salad for the summer. I love the lemon flavor with all the fruits. Delicious.

Ingredients

  • 1/2 cup acini di pepe (tiny bead shaped pasta)
  • 4 ounces instant lemon pudding mix
  • 29 ounces can peaches in light syrup
  • 22 ounces mandarin orange sections, drained
  • 1 pint strawberries, fresh, sliced
  • 1/2 cup sliced almonds
  • 8 ounces whipped topping, thawed

How To Make lemon sunshine salad

  • Step 1
    Cook pasta according to package directions. Drain and add to mixing bowl.
  • Step 2
    Stir in pudding mix.
  • Step 3
    Drain peaches, reserving half cup of syrup, stir into pasta mixture.
  • Step 4
    Cut peach slices into bite size pieces.
  • Step 5
    Fold peaches, mandarin oranges, and strawberries into mixture.
  • Step 6
    After two hours fold in whipped topping and sliced almonds.
