Nice low-calorie Salad to have in the summer ! Low fat lemon yogurt in it and reduced-calorie mayonnaise. Great way to use any leftover chicken you may have.

  • 2 c
    fresh or frozen blueberries, divided
  • 3/4 c
    low fat lemon yogurt
  • 3 Tbsp
    reduced calorie mayonnaise
  • 1 tsp
  • 2 c
    cubed cooked chicken breasts
  • 1/2 c
    sliced green onions (scallions)
  • 3/4 c
    diagonally sliced celery

How to Make Lemon Blueberry & Chicken Salad


  1. Reserve a few blueberries for garnish.
    In a medium sized bowl, combine yogurt, mayonnaise and salt.
  2. Add the remaining blueberries, chicken green onions, celery and bell pepper.
    Mix gently.
  3. Cover and refrigerate to let flavors blend, at least 30 minutes.
    Serve over endive or other greens garnished with reserved blueberries and lemon slices, if desired.
  4. Yield: about 5 cups
    Per portion: 244 calories, 25 g fat, 22 carbohydrate
    Serves 4
