killer apple raitha (apples in yogurt sauce)

That was the day when an aunt created this wonder in my kitchen...a fruit Raitha! I have loved it since then and after many variations...I came up with this version - all of whose ingredients you'll find at any/all grocery stores. A no compromise dish...rich in taste, nutrient content and colors! Happy eating - Happy rejuvenating!

Ingredients

  • 5 large apples (red/green) shredded (big shreds)
  • 1 - 1 inch ginger piece, shredded
  • 3 cups organic yogurt
  • 2 tablespoons extra virgin olive oil (evoo)
  • 3/4 cup peanuts
  • 3/4 cup cilantro, finely chopped
  • - salt to taste

How To Make killer apple raitha (apples in yogurt sauce)

  • Step 1
    Heat EVOO in a pan and add peanuts to the same.
  • Step 2
    Once the peanuts have roasted, add the apple shreds, ginger and cilantro to the pan and fry them for about 10 min and turn off the heat.
  • Step 3
    Once the mixture has cooled, add yogurt and salt and serve (with rice/tortilla/tacos - whatever you would find under the sun!) Happy Fruit Disguising!
