Jicama is a root that resembles a turnip although it has a mild, sweet flavor and a crisp texture. Diced and tossed with watermelon, mint, watercress and a light dressing makes a beautiful side dish or salad course.

champagne vinegar
2 Tbsp
tequila
2 Tbsp
lime juice
1 tsp
honey
1 pinch
cayenne pepper
1/2 c
canola oil
4 c
watermelon, seedless cut 1/2 into - inch dice
4 c
jicama, cut 1/2 into - inch dice
1 bunch
watercress
1/2 c
mint, fresh
fine sea salt and freshly ground pepper to taste

How to Make Jicama and Watermelon Salad with Mint

Step-by-Step

  • 1Whisk together the champagne vinegar, tequila, lime juice, honey and cayenne pepper in a mixing bowl. Season with salt and pepper and slowly whisk in the canola oil until emulsified.
  • 2Combine the watermelon and jicama large mixing bowl. Season with salt and pepper and add the vinaigrette; toss to coat evenly and place the salad on a platter.
  • 3Garnish the top with watercress and mint.
