Recently I wanted a salad w/ a fall taste, so I made a basic salad and added what I though would make it taste more harvesty. It's great w/ a pork and apple dinner.

Ingredients

  • 1/2 cup walnuts, chopped
  • 1/4 cup fresh cranberries
  • 1/4 cup balsamic vinegar
  • 1 cup chopped red onion
  • 1 tablespoon sugar
  • 1 tablespoon dijon mustard
  • 1 cup olive oil
  • - salt and pepper to taste
  • 10 cups organic mixed field greens
  • 2 medium red delicious apples, cored and thinly sliced.

How To Make harvest salad

  • Step 1
    Heat oven to 350 Spray a baking sheet w/ cooking spray. Spread chopped walnuts on baking sheet in single layer. Bake 10 mins.
  • Step 2
    In blender, blend cranberries, vinegar, onion, sugar, and mustard until smooth. Add oil and season w/ salt & pepper.
  • Step 3
    In lg bowl, toss together mixed greens, apples, and cranberry mix to coat. Sprinkle w/ toasted walnuts.
