This can be made as a light lunch or a side salad to any meat or pork, goes especially well w/ pork loin.

Ingredients

  • 12 cups organic mixed greens, like olivias.
  • 2 tablespoons or to taste, cranberries, preferably fresh, not frozen
  • 2 teaspoons minced garlic from a jar
  • 1 - minced shallot
  • 3 tablespoons olive oil
  • 1 tablespoon red wine vinegar
  • 1 tablespoon maple syrup, preferably real, organic syrup
  • 1 tablespoon dijon mustard
  • - sea salt and pepper to taste
  • 1/4 cup toasted pumpkin seeds

How To Make harvest mixed green salad w/ cranberry dressing

  • Step 1
    Place greens in lg bowl. In small saucepan, bring some water, ( about 1/2 way full,) to a boil. Remove pan from heat, add cranberries. Let sit about 5 mins, drain.
  • Step 2
    Chop cooled cranberries. In skillet, over medium heat, saute garlic and shallot in 1 tbsp oil until soft. Add cranberries, vinegar, maple syrup, mustard and remaining oil.
  • Step 3
    Remove from heat and season w/ salt and pepper. Drizzle over greens, toss to coat. Sprinkle salad w/ pumpkin seeds.
