Ingredients
- 12 cups organic mixed greens, like olivias.
- 2 tablespoons or to taste, cranberries, preferably fresh, not frozen
- 2 teaspoons minced garlic from a jar
- 1 - minced shallot
- 3 tablespoons olive oil
- 1 tablespoon red wine vinegar
- 1 tablespoon maple syrup, preferably real, organic syrup
- 1 tablespoon dijon mustard
- - sea salt and pepper to taste
- 1/4 cup toasted pumpkin seeds
How To Make harvest mixed green salad w/ cranberry dressing

Step 1Place greens in lg bowl. In small saucepan, bring some water, ( about 1/2 way full,) to a boil. Remove pan from heat, add cranberries. Let sit about 5 mins, drain.

Step 2Chop cooled cranberries. In skillet, over medium heat, saute garlic and shallot in 1 tbsp oil until soft. Add cranberries, vinegar, maple syrup, mustard and remaining oil.

Step 3Remove from heat and season w/ salt and pepper. Drizzle over greens, toss to coat. Sprinkle salad w/ pumpkin seeds.
