Gingered Chicken and Fruit Salad

This is one of my family's favorite salads. It is great in warm weather.

2 c
cooked, cubed, chicken breast
3 medium
red delicious apples
3 medium
granny smith apples
1 c
white and/or red seedless grapes
2 c
pineapple chucks, fresh or canned
1/2 c
slivered almonds
2 c
2 Tbsp
ground ginger

How to Make Gingered Chicken and Fruit Salad


  • 1Dice the apples.
  • 2Cut grapes in half.
  • 3In a small bowl, mix mayonnaise and ginger until well blended.
    Set aside.
  • 4In a large bowl, place chicken, fruit and almonds.
    Toss lightly to mix.
  • 5Add mayonnaise mixture and stir until ingredients are coated evenly.
  • 6Store covered in refrigerator.
  • 7Serve as a salad or stuffed in pita pockets. You can leave out the chicken for a side salad.
