gingered chicken and fruit salad

This is one of my family's favorite salads. It is great in warm weather.

Ingredients

  • 2 cups cooked, cubed, chicken breast
  • 3 medium red delicious apples
  • 3 medium granny smith apples
  • 1 cup white and/or red seedless grapes
  • 2 cups pineapple chucks, fresh or canned
  • 1/2 cup slivered almonds
  • 2 cups mayonnaise
  • 2 tablespoons ground ginger

How To Make gingered chicken and fruit salad

  • Step 1
    Dice the apples.
  • Step 2
    Cut grapes in half.
  • Step 3
    In a small bowl, mix mayonnaise and ginger until well blended. Set aside.
  • Step 4
    In a large bowl, place chicken, fruit and almonds. Toss lightly to mix.
  • Step 5
    Add mayonnaise mixture and stir until ingredients are coated evenly.
  • Step 6
    Store covered in refrigerator.
  • Step 7
    Serve as a salad or stuffed in pita pockets. You can leave out the chicken for a side salad.
