This is one of my family's favorite salads. It is great in warm weather.

Ingredients

Add to Grocery List

  • 2 c
    cooked, cubed, chicken breast
  • 3 medium
    red delicious apples
  • 3 medium
    granny smith apples
  • 1 c
    white and/or red seedless grapes
  • 2 c
    pineapple chucks, fresh or canned
  • 1/2 c
    slivered almonds
  • 2 c
    mayonnaise
  • 2 Tbsp
    ground ginger

How to Make Gingered Chicken and Fruit Salad

Step-by-Step

  1. Dice the apples.
  2. Cut grapes in half.
  3. In a small bowl, mix mayonnaise and ginger until well blended.
    Set aside.
  4. In a large bowl, place chicken, fruit and almonds.
    Toss lightly to mix.
  5. Add mayonnaise mixture and stir until ingredients are coated evenly.
  6. Store covered in refrigerator.
  7. Serve as a salad or stuffed in pita pockets. You can leave out the chicken for a side salad.
