This taste great any time of the year. My family and friends love it. A good way to use extra apples during apple season.

  • 4 1/2 c
    2 -3 large granny smith apples, chopped
  • 1/2 c
    chopped pecans
  • 1/4 c
    dried sweet cherries
  • 3 Tbsp
    chopped crystallized ginger
  • 2 Tbsp
    thawed orange juice concentrate
  • 1 Tbsp
    lemon juice
  • 1 Tbsp
  • 2 large
    bags of baby spinach, stemed and washed.

How to Make Ginger Apple Salad


  1. Combine all ingredients in a large bowl; toss well
  2. Let stand for 10 minutes before serving; place on top of baby spinach leaves.
