I found this in a lowfat, healthy booklet. not tried it yet, but sounds yummy and will be good at this summer's bbq's

Ingredients

  • 3 cups tricolor rotelle
  • 1 1/2 cups cooked, cubed turkey breast
  • 1 cup cantalope cubes
  • 1 cup seedless grapes
  • 1/2 cup drained crushed pineapple
  • 2 tablespoons raisins
  • TOPPING
  • 1 cup non fat yogurt
  • 1 tablespoon honey
  • 1 tablespoon red wine vinegar
  • 1/4 cup fresh mint
  • 1/4 cup fresh parsley, minced
  • 2 tablespoons unsalted sunflower kernals, for garnish

How To Make fruited turkey salad

  • Step 1
    cook, boil rotelle 10 minutes. drain and rinse.cool and place in large bowl.
  • Step 2
    add meat and fruit, mix well
  • Step 3
    mix topping ingredients in a small bowl, except for the herbs. stir those in after topping is well blended
  • Step 4
    toss all together and serve over a bed of your favorite lettuce, topping with a sprinkle od the sunflower kernals
  • Step 5
    calories : 344 3.7 grams fat 2.2 grams fiber 25 mg cholesterol 64 mg. sodium
