This is the best darn chicken salad I have had in a long time and thought you all might like to try it... It's fresh and crunchy and so refreshing for lunch or dinner- on these warm summer days- what am I saying it's darn right "HOT" here and many other places too! Give this a try you will love it or my name isn't "Kitchen Chatter" lol

  • 3/4 c
    sun-maid tropical trio or fruit bits or golden raisins
  • 1/3 c
    white grape juice or apple juice
  • 1/2 c
    light or regular mayonnaise or miracle whip salad dressing
  • 1 Tbsp
    mustard, spicy brown or dijon honey mustard
  • 3 c
    diced, cooked chicken or turkey
  • 1/3 c
    thinly sliced green onions
  • 1/3 c
    slivered almonds, toasted

How to Make Fruited Chicken Salad


  1. Combine fruit and grape juice in a small saucepan and bring to a simmer. Stir. Refrigerate for 15 minutes.
  2. Mix together mayo and mustard in a medium bowl.
    Add chicken, green onions and almonds. Mix well.
    Stir cooked fruit into chicken mixture. Serve over salad greens as a main dish salad or in a pita pocket or on whole wheat bread as a sandwich filling.
  3. Variation: For fruited Curried chicken Salad, add 1 teaspoon curry powder to the mayo mixture.
