This is the best darn chicken salad I have had in a long time and thought you all might like to try it... It's fresh and crunchy and so refreshing for lunch or dinner- on these warm summer days- what am I saying it's darn right "HOT" here and many other places too! Give this a try you will love it or my name isn't "Kitchen Chatter" lol Recipe on the back of my Sun-Maid Raisins.

Ingredients

  • 3/4 cup sun-maid tropical trio or fruit bits or golden raisins
  • 1/3 cup white grape juice or apple juice
  • 1/2 cup light or regular mayonnaise or miracle whip salad dressing
  • 1 tablespoon mustard, spicy brown or dijon honey mustard
  • 3 cups diced, cooked chicken or turkey
  • 1/3 cup thinly sliced green onions
  • 1/3 cup slivered almonds, toasted

How To Make fruited chicken salad

  • Step 1
    Combine fruit and grape juice in a small saucepan and bring to a simmer. Stir. Refrigerate for 15 minutes.
  • Step 2
    Mix together mayo and mustard in a medium bowl. Add chicken, green onions and almonds. Mix well. Stir cooked fruit into chicken mixture. Serve over salad greens as a main dish salad or in a pita pocket or on whole wheat bread as a sandwich filling.
  • Step 3
    Variation: For fruited Curried chicken Salad, add 1 teaspoon curry powder to the mayo mixture. --- Cal: 460; protein 33g;(Sat. Fat 4g); Carbs 33g; Fiber 2g; cholesterol 105mg; Sodium 440mg.
