1Rinse the baby spinach and put in a bowl. Add the mozzarella cheese & drained oranges. Toss together.
2Caramelize almonds: Put 4 tablespoons sugar in heavy skillet. Add almonds. Stir constantly over low heat until sugar melts, turns brown and collects on almonds. Remove from heat and break apart to cool. USE A WOODEN SPOON--others melt!
3Dress the salad with the poppy seed dressing to your liking; or you can keep it on the side if you prefer. I find I like it better when all the flavors have blended and the dressing isn't just on top.
