delicious mixed green with fennel and citrus salad

This is a great summer salad I have served several times but can be made any time of the year. And what is so great about this salad is that it is only 90 calories. My family and friends loved this every time I make it. Had to share the recipe many times.

Ingredients

  • 3 cups thinly sliced fennel bulb (about 2 small bulbs)
  • 3 tablespoons light olive oil vinaigrette
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 1 - (5 ounce) package of baby mixed salad greens
  • 2 - blood oranges, peeled and sectioned
  • 2 tablespoons sliced almonds, toasted (optional)

How To Make delicious mixed green with fennel and citrus salad

  • Step 1
    In a large bowl, combine first five ingredients and toss to coat.
  • Step 2
    Divide salad greens mixture evenly onto four salad plates.
  • Step 3
    Top salads evenly with orange segments.
  • Step 4
    Garnish with almonds, if desired and serve.
