cheesy fruit salad

This is a favorite salad recipe of my family - very simple sometimes I use navel oranges, ham strips of chicken and pecans or candied walnuts, sesame seeds,sunflower seeds or slivered almonds too!

Ingredients

  • 6 cups assorted salad greens, torn into bite-size pieces
  • 16 ounces can mandarin oranges, drained
  • 4 ounces cheddar or swiss cheese, cut into julienne strips
  • 1/2 cup apricot or grape preserves or your favorite
  • 1/2 cup olive oil
  • 1/4 cup white vinegar
  • 1 tablespoon minced onion

How To Make cheesy fruit salad

  • Step 1
    Arrange greens, oranges and cheese in a salad bowl or place on individual plates. --- Heat preserves in a small saucepan over medium heat until melted. Remove from heat.
  • Step 2
    When preserves have cooled a little, pour into a mason jar along with the oil, vinegar and onion, cover jar and shake well. Pour over salad and toss lightly. Very refreshing! Keep any leftover dressing in refrigerator.
