carrot almond salad
I usually make this in large amounts for family gatherings but I have scaled it down for posting here. There is a good variety of tastes and textures in this salad and you can easily adjust the proportions of the ingredients to personal taste. I think it is best when made the day before needed and kept in refrigerator overnight.

Ingredients
- 1 pound carrots
- 2 medium granny smith apples
- 1 cup almonds
- 1 cup black sun-dried raisins
- 2 tablespoons lemon juice
- 2 teaspoons butter
- 3/4 cup mayonnaise
How To Make carrot almond salad

Step 1Cube the apples, unpeeled. Place in just enough cold water to cover with the lemon juice added. Let them sit until all other ingredients ready. Drain just before adding.

Step 2Saute almonds in butter until light brown. Place on paper towel to drain.

Step 3Peel and shred carrots.

Step 4Add carrots, almonds, raisins, and apples to a large bowl. Mix in mayonnaise.

Step 5Ready to serve immediately, or keep covered in refrigerator overnight.
