Carrot Almond Salad

I usually make this in large amounts for family gatherings but I have scaled it down for posting here. There is a good variety of tastes and textures in this salad and you can easily adjust the proportions of the ingredients to personal taste. I think it is best when made the day before needed and kept in refrigerator overnight.

Ingredients

  • 1 lb
    carrots
  • 2 medium
    granny smith apples
  • 1 c
    almonds
  • 1 c
    black sun-dried raisins
  • 2 Tbsp
    lemon juice
  • 2 tsp
    butter
  • 3/4 c
    mayonnaise

How to Make Carrot Almond Salad

Step-by-Step

  1. Cube the apples, unpeeled. Place in just enough cold water to cover with the lemon juice added. Let them sit until all other ingredients ready. Drain just before adding.
  2. Saute almonds in butter until light brown. Place on paper towel to drain.
  3. Peel and shred carrots.
  4. Add carrots, almonds, raisins, and apples to a large bowl. Mix in mayonnaise.
  5. Ready to serve immediately, or keep covered in refrigerator overnight.
