healthier broccoli bacon salad

This is one incredible broccoli salad recipe that I just love. The cranberries and water chesnuts give great texture and flavor and with bits of bacon really makes it a hit. The honey pear vinaigrette dressing is so delicious and pulls the salad together. I have made this salad several times for picnics and parties and someone is always asking for the recipe. This is a recipe that was in Earth & Vine Provisions product magazine that they send out when you place an order. They have lots of yummy products and recipes.

Ingredients

  • BROCCOLI BACON SALAD
  • 4 cups broccoli crowns, finely chopped
  • 8 ounces can sliced water chestnuts, chopped
  • 4 tablespoons dried cranberries
  • 4 slices bacon, cooked and crumbled
  • DRESSING
  • 1/2 cup honey pear vinaigrette (earth & vine provisions or trader joe's brand)
  • 2 tablespoons mayonnaise
  • 1/4 cup yogurt
  • - pepper to taste

How To Make healthier broccoli bacon salad

  • Step 1
    Chop up your broccoli.
  • Step 2
    Mix together ingredients for your salad dressing and set aside.
  • Step 3
    Prepare your salad and toss with the dressing, then refrigerate till ready to serve. Toss one more time before serving.

    2-24-14 --- Made this tonight for my monthly "Girl's Night In" and the ladies loved it! Such a simple but delicious salad that is light and tasty too. I also tried chopped walnuts instead of almonds; both equally as good.
