In saucepan, over medium-high heat, cook raspberry preserves and vinegar for 1 min. Increase heat to high and bring to a boil. Cook 1 min. Remove from heat.
Stir mustard into preserves mix. slowly whisk in oil. Season w/ salt and pepper to taste.
In bowl, gently toss last 5 ingredients. Drizzle salad w/ dressing, just before serving
