apple-craisin salad

This lovely salad came from a church friend. Everyone seems to love it. It can be doubled or tripled for more servings. Re the yogurt: I have used the plain, non-fat called for in the recipe, but in a pinch I've also used non-fat vanilla, pineapple, or most any white-colored yogurt.

Ingredients
- 1 - each, fugi and golden delicious apples, cut into 8ths, then sliced into small bite sized pieces
- ~~ - fruit fresh, to keep apples from browning
- 1/4 cup each, mayo and plain non-fat yogurt
- 1/2 cup craisins (dried cranberries)
- 1/3 cup diced celery
- 2 teaspoons sugar or splenda
- 1/2 teaspoon salt
- 1/2 teaspoon lemon juice
How To Make apple-craisin salad

Step 1Chop the apples and sprinkle with Fruit Fresh (or dip them a solution of fruit fresh and water) to prevent browning.

Step 2Add the craisins and celery to the apples. Mix together the mayo, yogurt, sugar or Splenda, salt and lemon juice, gently stir into the apples.

Step 3Chill and enjoy. Refrigerates nicely for a couple days.
