This lovely salad came from a church friend. Everyone seems to love it. It can be doubled or tripled for more servings.
Re the yogurt: I have used the plain, non-fat called for in the recipe, but in a pinch I've also used non-fat vanilla, pineapple, or most any white-colored yogurt.

Ingredients

1
each, fugi and golden delicious apples, cut into 8ths, then sliced into small bite sized pieces
~~
fruit fresh, to keep apples from browning
1/4 c
each, mayo and plain non-fat yogurt
1/2 c
craisins (dried cranberries)
1/3 c
diced celery
2 tsp
sugar or splenda
1/2 tsp
salt
1/2 tsp
lemon juice

How to Make Apple-Craisin Salad

Step-by-Step

  • 1Chop the apples and sprinkle with Fruit Fresh (or dip them a solution of fruit fresh and water) to prevent browning.
  • 2Add the craisins and celery to the apples. Mix together the mayo, yogurt, sugar or Splenda, salt and lemon juice, gently stir into the apples.
  • 3Chill and enjoy. Refrigerates nicely for a couple days.
