This lovely salad came from a church friend. Everyone seems to love it. It can be doubled or tripled for more servings. Re the yogurt: I have used the plain, non-fat called for in the recipe, but in a pinch I've also used non-fat vanilla, pineapple, or most any white-colored yogurt.

Ingredients

  • 1 - each, fugi and golden delicious apples, cut into 8ths, then sliced into small bite sized pieces
  • ~~ - fruit fresh, to keep apples from browning
  • 1/4 cup each, mayo and plain non-fat yogurt
  • 1/2 cup craisins (dried cranberries)
  • 1/3 cup diced celery
  • 2 teaspoons sugar or splenda
  • 1/2 teaspoon salt
  • 1/2 teaspoon lemon juice

How To Make apple-craisin salad

  • Step 1
    Chop the apples and sprinkle with Fruit Fresh (or dip them a solution of fruit fresh and water) to prevent browning.
  • Step 2
    Add the craisins and celery to the apples. Mix together the mayo, yogurt, sugar or Splenda, salt and lemon juice, gently stir into the apples.
  • Step 3
    Chill and enjoy. Refrigerates nicely for a couple days.
