A is for Apple Salad
(Country Woman magazine recipe that I have tweaked for my family's taste.)
1 1/4 corange juice
1/2 tsporange extract
1 can(s)pineapple tidbits (20 ounce can), drained
1 can(s)manderin oranges,(11 ounce can) drained
1medium tart green apple, chopped
1medium red apple, chopped
1 ceach seedless red and green grapes, halved
How to Make A is for Apple Salad
- In a small saucepan, combine sugar and cornstarch. Stir in orange juice until smooth. Bring to a boil; cook and stir for 2 minutes or until thickened. Remove from the heat; stir in orange extract. Cool.
- In a large serving bowl, combine the pineapple, oranges, apples and grapes. Add dressing; stir gently. Cover and refrigerate until serving. Yield: 6 servings.
- Note: Before serving, I add some chopped pecans and sliced bananas. A sprinkle of coconut and a few maraschino cheeries over the top is pretty.
