a fabulous salad to take to pot lucks. being sugar flour and wheat free isn't too much of a challenge for me anymore. with recipes like this one, i don't feel deprived.

Ingredients

  • 4 cups cooked quiona
  • 1 cup corn (grilled or roasted is best)
  • 2 - links chicken sausage ( i like tj's spicy chicken sausage)
  • 1 can black beans
  • 1/2 cup cilantro
  • 1/4 cup white balsamic vinegar
  • 6 tablespoons olive oil
  • 1 teaspoon salt
  • 1/4 cup chopped walnuts
  • 1/2 cup finely choppped red onion
  • 1/4 cup raisins, yellow
  • 2 teaspoons garlic powder
  • 1 1/2 teaspoons cumin

How To Make quiona salad

  • Step 1
    cook chicken sausage in olive oil. prepare quiona according to directions. cool chicken and quiona. cut chicken in small bite size pieces. mix all ingredients together. serve chilled.
