pineapple, cashew, grapes, and chicken salad

I went to a restaurant in Phoenix, Arizona and I had shared this Pineapple Salad with my husband. It was wonderful!

Ingredients

  • 1 - pineapple cut in half insides out.
  • 1 1/2 cups turkey or chicken cooked cut into squares
  • - instead of that you can use1 1/2 cans chicken drained
  • 1 cup mayonaise to moisten
  • 1 tablespoon sour cream
  • 2 tablespoons cranberries
  • 1/4 cup mandarin oranges drained
  • 1/2 cup cashews salted or almonds
  • 1/4 cup pineapple drained
  • 2 - green onions chopped small
  • 1/4 cup diced celery small pieces
  • 1/2 cup green or red grapes cut in half
  • 1/2 teaspoon lemon juice
  • - dash pepper, salt, tabasco
  • - coconut sprinkles on top

How To Make pineapple, cashew, grapes, and chicken salad

  • Step 1
    Start with a pineapple the largest you can find. The one I found in Utah was pretty small.
  • Step 2
    Slice a pineapple in half. Cut out all the insides of the pineapple.
  • Step 3
    Take a bowl and put mayonaise, lemon juice, and sour cream and mix together. Put in the seasonings a dash of tabasco sauce optional.
  • Step 4
    Use1 1/2 cups of chicken or turkey and place in the bowl with mayonaise. Add the fruit, nuts, mandarins, and coconut. Mix together your done!
