A no mayo salad, so it's good to take on a picnic this summer! A fresh taste on chicken salad.

Ingredients

  • 3 fresh peaches, peeled and chopped
  • 2 cups cooked chicken breast, chopped
  • 1/2 cup celery, chopped
  • 1/2 cup radishes, chopped
  • 1/4 cup green onions, chopped
  • 1/4 cup green bell pepper, chopped
  • 1/4 cup vegetable oil
  • 3 tablespoons white vinegar
  • 1 teaspoon soy sauce
  • 1/2 teaspoon ground ginger
  • green leaf lettuce
  • 1/2 cup toasted pecans, chopped

How To Make peachy chicken salad

  • Step 1
    Combine the first 6 ingredients in a large bowl; toss. Set aside.
  • Step 2
    Combine the oil, vinegar, soy sauce, and ginger in a small bowl, stirring with a wire whisk until blended. Pour over the chicken mixture; stir gently.
  • Step 3
    Serve on lettuce leaves; sprinkle with pecans. Garnish with peach slices if desired.
