I LOVE chicken salad. After many tries I believe I have come up with the best recipe. It is loved by many of my friend and family, and I am always asked to make it for different celebrations. Its crunchy and delicious.

Ingredients
- 4 - boneless, skinless chicken breasts
- 3 - celery stalks
- 1 - carrot
- 1 - onion, small, yellow
- 1/4 cup parsley, chopped
- - mrs. dash (original)
- 1 cup mayonaisse
- 1/2 cup miracle whip
- - salt and pepper
How To Make my best chicken salad

Step 1Poach chicken over low heat with celery tops, chopped onion, carrot cut into large pieces, salt and pepper, and a tablespoon of Mrs. Dash for about 30 minutes.

Step 2Finely chop celery and parsley

Step 3Remove chicken from broth to cool. Cut into large pieces. Place pieces in food processor or mini-chopper. Pulse until chicken resembles large grains of sand. It should be coarse, not a paste.

Step 4Combine chicken, parsley, a capful of Mrs. Dash, salt and pepper to taste, and celery.

Step 5Add mayo and Miracle Whip. Fold to combine. Add more mayo if necessary.

Step 6Serve on crackers, croissants.

Step 7Strain broth of vegetables. Freeze broth for later use.
